15.Famous Banana Nut Bread
This banana bread is a big hit with my family and I make it at least 3 times a year. You can make a mini loaf of this by cutting the Ingredients in half and giving them out as gifts.
Preparation Time-20 minutes
Servings-20
Ingredients • 24 ounces white sugar
• 6 ounces softened butter
• 3 large eggs
• 16 ounces mashed ripened banana
• 4 ounces sour cream
• 28 ounces all-purpose flour
• 1/2 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon ground cinnamon
• 12 ounces pecans, chopped
Directions
1. Preheat oven to 325 degrees Fahrenheit. Coat 2 9”x5” loaf pan with a cooking spray. 2. Cream butter and white sugar together with an electric mixer until fluffy and light. Beat eggs into the mixture one at a time, ensuring each is fully incorporated before adding the next one. Stir in mashed bananas and sour cream.
3. Mix together flour, baking powder, baking soda, pecans and cinnamon and gently stir dry Ingredients into wet until just combined.
4. Evenly divide batter between prepared loaf pans and bake for 55-65 minutes until a knife inserted in the center comes out clean.
